Ingredients

  • 3 chicken drumsticks 

For the marinade:

  • 1 garlic cloves crushed
  • 2 tsp mild mustard
  • 1 tbsp organo dried
  • 1 tsp sweet paprika
  • 1 tsp olive oil extra virgin
  • salt
  • fresh pepper

For the potatoes:

  • 7 small potatoes quartered
  • 1 tbsp olive oil extra virgin
  • 4 onion quartered
  • 1 tbsp rosemary dried
  • 2 tbsp honey
  • 1 lemon (its juice)
  • salt
  • fresh pepper

Bake:

  • 2 cups chicken broth

Instructions

  • Preheat oven to 180oC/350oF.


Prepare the chicken:

  •  Mix the chicken and marinade ingredient into a bowl, then set aside.

Prepare the potatoes:

  • In a separate bowl, mix the potatoes with the remaining ingredients (except for the chicken broth).

Bake:

  • Pour the chicken and marinade into a baking dish, then add the chicken stock, potatoes, onion and lemon cups.
 
  • Bake for 50 minutes or until potatoes and chicken are thoroughly cooked. 
  • Remove from oven and rest for 5 minutes before serving.

Notes

Keep an eye on the liquid - don't let the sauce evaporate! Add chicken broth or hot water if needed.
